Two Beans. Two Methods. One Roastery.
We roast our own coffee. And recently, we roasted two single-origin beans for one of our wholesale accounts — a venue we're pretty proud to be supplying.
They turned out so well that we wanted to make them available to you too.
Right now you're already tasting them when you dine in — one as our espresso, one as our drip. Both are also available as frozen retail bags to take home, roasted in-house, rested and frozen at peak flavour.
Here's what they are and why we love them.
THE ESPRESSO BEAN
Ethiopia Guji Natural
Ethiopia is where coffee comes from. The origin of the plant, the culture, the craft. Coffee grown there has a character you don't find anywhere else — shaped by ancient growing traditions and some of the most remarkable coffee land on earth.
This bean comes from the Guji zone in southern Ethiopia, grown at over 2,100 metres above sea level. It's a natural process bean — the whole cherry dries in the sun before the seed is extracted, which naturally adds sweetness and depth to the cup.
We roast it to a medium profile. Just enough development to let the character of the bean come through in a shot of espresso without getting in its way.
What you'll taste:
Hazelnut · Cocoa powder
Smooth and satisfying as a short black. In a flat white or latte the hazelnut doesn't disappear behind the milk — it lifts the whole drink.

THE DRIP BEAN
Mexico Chiapas HighlandsWashed SHG
Chiapas is Mexico's southernmost state — mountainous country bordering Guatemala where coffee grows at up to 1,700 metres. This is some of Mexico's finest growing land, and this bean is graded at the highest quality level for the region.
It's a washed process bean — the fruit is removed before drying, which gives you a clean, defined cup where the flavour of the bean itself comes through clearly.
We roast it medium-dark for drip. That's where the sweetness and body of this bean opens up — and where it becomes exactly what you want in a morning filter coffee.

What you'll taste:
Dark chocolate · Dried fruit · Almond
Rich and consistent from first sip to last. The dark chocolate note runs all the way through. The dried fruit adds just enough to keep it interesting cup after cup.

WHY TWO BEANS?
Espresso and drip extract coffee differently — so we roast each bean specifically for the method it's designed for. It's a small detail that makes a real difference in what ends up in your cup.
These two are what's available right now. But we're always working with new origins and refining what we do — there are fifteen-plus beans moving through our roastery program. What's on offer will keep evolving.
That's the whole point of having your own roastery.
