The Roastery and Coffee Academy is coming soon to Farmers Branch. We are already roasting all our coffee in-house as we refine our profiles and shape the flavor expression for every cup served across our cafes. The new roastery will become our dedicated home for small batch air roasting, cupping, education, and wholesale development.

ABOUT THE ROASTERY
The Roastery will be the heart of our coffee program where sourcing, roasting, tasting, and training all come together. Every batch is profiled, cupped, logged, and refined with intention so that every coffee we serve reflects the standard we are known for.
THE PROCESS
Our roasting is built around the Chinook Piccolo air roaster, a machine that offers a high level of control. By adjusting airflow, heat application, and development time with precision, we can elevate sweetness, enhance clarity, and draw out distinct flavor characteristics in each green coffee.
Clayton leads this process with close attention to detail. Each profile goes through repeated cycles of sample roasting, cupping, and refinement until it expresses the flavor we are aiming for. This intentional and consistent approach is the same system we will scale when the full roastery opens.
CURRENT ROTATION
Our lineup features our House Espresso Blend alongside a rotating selection of Single Origin coffees. Each one is profiled to highlight its natural sweetness, clarity, and unique character, whether it shows citrus, chocolate, or a smooth rounded finish.
Our Single Origin offering will continue to evolve as fresh crops arrive and as we introduce more coffees with the opening of the roastery.
The Coffee Academy will launch with the new roastery. Courses will cover espresso foundations, milk texturing, latte art, workflow, and cafe operations. These classes are designed for home brewers, aspiring baristas, and professional teams who want to learn Australian coffee craft to a high standard.
Wholesale partnerships will open when the permanent roastery is operational. We will support partners with beans, training, and hands-on guidance. Our goal is to help cafes, bakeries, and offices serve consistently great coffee with simple high quality systems
